Tasting Notes: The staff at the Lakes Region Culinary Institute had the opportunity to taste Jasper Hill Farm’s Bayley Hazen Blue before we visited them on August 26, 2006. It was because of the outstanding quality of this cheese that we sought them out. This cheese is extraordinary, creamy, just the right tang (the acid level is perfect), full-flavored, in a word succulent. We strongly recommend you try this cheese. Jasper Hill also makes a second style Blue called Constant Bliss, and a English Leicester style cheese, neither of which we have tried yet, but plan too.
